Easy Egg Frittata Recipe

  • 10 large eggs (or 2-3 eggs per person)
  • ½ cup of yogurt, plain (or 2 tbsp per egg)
  • 1 tablespoons of olive oil
  • 1 leek
  • ½ pound of thin asparagus
  • 1 cup of frozen peas
  • 1 cup (packed) of baby spinach
  • (or veggies of your choice, amount by eye)
  • Salt and pepper (to taste)
  • 4 ounces of goat cheese, feta, or other cheese of choice
  • Optional garnish: fresh dill and parsley


  • Preheat oven to 400°
  • Chop up the white and light green parts of the leek. Add olive oil to the skillet and saute for 3 to 4 minutes. 
  • Trim and cut the asparagus in ½-inch pieces. Saute for 1 to 2 minutes.
  • Add the frozen peas, baby spinach, salt and pepper to taste, and saute for another 1 to 2 minutes, until spinach is wilted. 
  • Remove ⅓  of the vegetables to a plate. Evenly spread out the remaining half of the vegetables.
  • In a large bowl, whisk the eggs, yogurt, salt, and pepper together. 
  • Add the vegetables and cheese.
  • Transfer to the oven and cook for 15 to 20 minutes, when the eggs are set.
  • Garnish with additional herbs.
