Easy Egg Frittata Recipe

Ingredients:
- 10 large eggs (or 2-3 eggs per person)
- ½ cup of yogurt, plain (or 2 tbsp per egg)
- 1 tablespoons of olive oil
- 1 leek
- ½ pound of thin asparagus
- 1 cup of frozen peas
- 1 cup (packed) of baby spinach
- (or veggies of your choice, amount by eye)
- Salt and pepper (to taste)
- 4 ounces of goat cheese, feta, or other cheese of choice
- Optional garnish: fresh dill and parsley
Steps:
- Preheat oven to 400°
- Chop up the white and light green parts of the leek. Add olive oil to the skillet and saute for 3 to 4 minutes.
- Trim and cut the asparagus in ½-inch pieces. Saute for 1 to 2 minutes.
- Add the frozen peas, baby spinach, salt and pepper to taste, and saute for another 1 to 2 minutes, until spinach is wilted.
- Remove ⅓ of the vegetables to a plate. Evenly spread out the remaining half of the vegetables.
- In a large bowl, whisk the eggs, yogurt, salt, and pepper together.
- Add the vegetables and cheese.
- Transfer to the oven and cook for 15 to 20 minutes, when the eggs are set.
- Garnish with additional herbs.
