- Take the steak out of the fridge about 20 minutes before you plan to start cooking.
- Start with a hot pan. This is key to avoid boiling your steak instead of searing it.
- While the pan is hot, season the steak with salt and pepper. Use large grains of pepper to create heat
- Mop up the steak with any leftover seasonings.
- Once the pan is smoking, add oil.
- Lay steaks down away from you and let the pan do the work! You should hear a sizzle.
- Sear each side for 30 seconds and use the tongs to turn over the steak.
- Be sure to sear on all sides. Tilt the pan down so oil runs across the steak for an even better sear.
- Lightly crush up garlic and add to the pan.
- Continue to turn over the steak every minute to ensure even color and cooking.
- Add thyme and a touch more oil.
- Next, add about 2 tablespoons of butter.
- Brush any leftover garlic over top of steak
- Remove steak from pan and let rest.
- Slice and enjoy!
